Spaghetti Bolognaise

I love making spaghetti Bolognaise because its the perfect time to experiment.
This time and I wish I had take a pic of it I had kidney beans and mushrooms fresh from new World along with Spring Onions, salt and lots of pepper. Loaded up with frozen tomatoes and tomato sauce topped with grated cheese. 
Now to think about how to reuse all these left over kidney beans.

Lemon Cake

Was up all night trying to put this together: 
Double Layer Lemon Cake with Fondant like cream cheese frosting.
For the double layer I bought two 9inch round cake pans- mostly because these were $7.95 each and its preparation for my Rainbow cake for 5year old in March. 
The cream cheese frosting was store bought thankfully as cream cheese is twice the cost. 
Dumped the cream cheese frosting in the microwave for 30 seconds. Dropped on first layer.
Dumped it into microwave again for another 30seconds, this was two watery so had to let it cool off and then put again for 10 seconds. 
Stuffed with sprinkles and then put into the fridge to set overnight.
Lets hope birthday girl appreciates the late night.

Egg lunch date

I just love his office, they have a kitchen stove and well its practically a house.
This particular day he fried eggs and had bought long loaf and tea and called me to come over.
The small things in life.... the Perfect Egg lunch date for us


Mum's kokoda

Nothing beats mum's kokoda.
These are just the best. 
Fresh fish soaked overnight in vinegar then stuffed with capsicum, grated carrots and spring onions and chillies immersed in coconut milk

Stir fry


My very first colourful stir fry with everything from the new- well not so new any more New World Supermarket. I just love that place, makes me feel like I'm walking around Countdown in NZ. 
Stir Fry Recipe:
Chicken Breast pieces sliced up- already sold like that at the New World Deli
Mushrooms - fresh in a pack, in the deli section
Carrots
Broccoli
Salt
Pepper
Kikomon Sauce 
All for under $25

Ended up adding noodles for Jitoko's sake.

Fourth November

4th of November flew by so fast where did the year go. 10 months since you're gone daddy. We miss you. The realisation that you are not coming back and will never be around for the rest of my life is slowly setting it and that empty feeling that empty feeling that we will never see you again sets in.
But I know we will see you again  the thing that bugs me is yes I know I will see you again. Yes when Jesus comes back if jesus doesn't come for another 40years I will not see you again until another 40years. That sucks. So many things you have missed. Jaydon's enjoying school Jaydon's fancy moments. Jaydon's ways are exactly like yours that there are moments when we don't know whether to laugh at how funny it is or cry at how tragic it is that you are not here to see it. We have learnt to rest in the assurance, the peace and the understanding that you are now with God and that you are no longer in pain and that even though its hard not having you around we thank God for your legacy.
