I'm blessed
I woke up crying this morning because there was not going to be a 6am call from you asking when i was coming or what i wanted to eat when i came or birthday card with money even at 30, a mother and working i could still be your lil girl taking money out of your wallet. I missed you today daddy and alot but these two did everything they could to make it special. Here's to making new memories. Here's to your legacy.

Reminder

Writing final moments
Still not able to write about daddy's final moments. I think somewhere at the back of my head I am afraid I might get the details wrong or I might forget or I might do him injustice by not writing it properly but it is our testimony and I need to be able to write about it for the proper closure and in honour of him. Maybe I should break it into excepts and post as it comes or write is somewhere else and then finally piece it together. Whichever it is I need to get down to it, atleast before the end of the month.
My first pie
From scratch base and all
After much hesitation on trying a pie crust from scratch I can now say I have found the perfect pie crust recipe. Tried and proven from Closet cooking, easy peasy. Now I am confident enough to try a pizza base, maybe next weekend.
A light and flaky biscuit like pie crust that is a great alternative to the pastry pie crust that uses a lot less butter. To change things up you can add some herbs to the crust.
Servings: makes enough 2 pie crusts or 1 double pie crust
Prep Time: 10 minutes
Cook Time: 0 minutes
Total Time: 10 minutes
Ingredients
2 cups flour
1 tablespoon baking powder
3/4 teaspoons salt
6 tablespoons unsalted butter, cold and cut into 1/4 inch cubes
3/4 cup milk
2 tablespoons basil, chopped (optional)
Directions
Mix the flour, baking powder and salt in a food processor.
Add the butter and pulse until it resembles coarse meal.
Add the milk and pulse until it forms a dough.
Split the dough in half and roll each out on a well floured surface one at a time.
Now the topping, Lemon meringue in condensed milk from as easy as pie Facebook page:
1 Tin condensed milk
3 eggs separate yolks from whites
1/2 cup lemon juice
1/2 cup sugar.
Whip egg white till stiff and puffy- should not topple over when turn bowl upside down.
Set bowl aside mix yolks and condensed milk and add lemon juice
Add sugar to egg white and mix for 1 minute. Add egg mix to pie crust top with whites.
Bake at 160 degrees for 25minutes.
Absolutely delicious.

Goodbye Daddy
Gone to be with the Lord, eternal rest. I miss you too much but I know you are no longer in pain. Wish I had one more day with you but your final moments are our testimony! One of these days I will sit down to write about it when the pain is not so raw. RIP daddy. I miss you so much, it hurts!

Standing on for this year

Yesterday is gone. Its all over and done with, time to move on and look ahead and look forward. For the first time in years, I have no idea what this year has in store for me, I have no idea what to look forward to or not or what to expect. I suppose it has a lot to do with dad's condition. Maybe more so to do with how the year went but one thing I am having to learn and get a grip on is taking it step by step, one day at a time.
Days are becoming endless but I think am down to living by the minute and every single I am becoming thankful for. With dad, every day he wakes up is a day to be thankful for. I don't know how long we will have him for and I have come to accept that he may go soon. I even had the opportunity to lead him to a prayer of re dedication which I said on his behalf while he held my hand. It was very redeeming. overwhelming, excited nervous and heavy hearted thinking that was the end but then Monday happened and everything was good. Tuesday happened and it was another good day. But yesterday? Yesterday was terrible. He was in a crappy mood. Cranky and grumpy all day and there were moments where I could possibly gone into a fight with him. Somewhere at the back of my head I had to wonder whether he was upset that he woke up and found himself still alive. There were moments where I practically told him off and then had to go back and apologise to him.
I am thankful for another day. I am standing on God's word that he will move and we will receive our miracle. I am believing that God will do things. At the moment I have no idea what or how or when but that he will. That he is faithful. That he never fails. That his love endures forever. Richard said that this was my going through the furnace experience. I was being put through the fire and being refined. If I had to describe 2013- It was painful, it was tough. Words were said, things were done, I had to learn to forgive, let go and walk away. I had to release and let God. I had to totally trust in God every step of the way. I had to learn to become dependent on God and I have watched myself change. I have been stretched, pressed, crushed and trampled upon but I can say one thing and one thing for sure. God was faithful every step of the way. We never ran out, I paid all my bills am close to clearing all my debts and am still standing because he raised me up.
Funny thing this dog came into our yard on New Year's Eve. Sean and Jitoko have been going on and on about it since it came it I was finally able to see it yesterday. Back legs completely broken down and probably trampled over. Front legs also crushed but this dog made it from somewhere high up in the neighbourhood right into and through our compound pushing itself forward with all its might. When mum and I were praying last night I said to her there's got to be a reason God brought that dog into our yard. Yes maybe for its safety and well being but most importantly it represents us. Practically broken all over and probably still falling apart, like a duck swimming up a pond as my boss always likes to say. We should continue to move forward, we should continue to move forward, continue to trust in God and keep pushing ourselves pressing towards the goal as much as we possibly can just like that dog did.
As for the dog, Jitoko took it some water and carried it to a shade across the road. When it rained heavily he was worried it was gonna fall into the drain and sure enough he said he found it practically drowning in the drain he had to lift it up again and carry it back up. This morning on our way to work it was lying there on the side of the drain but still alive.
Cinnamon Roll
Made my first Cinnamon Roll yesterday. Quite proud of how it turned out.
Especially excited with how it actually rose resulting from the yeast, my first yeast experience.
Its actually a Paula Deen recipe I found online with a few minor changes.
Dough:
28grams yeast
1/2 cup warm water
1/2 cup hot milk
1/4 cup sugar
1/3 cup butter
1 teaspoon salt
1 egg
4 cups flour
Filling:
1/2 cup butter
3/4 cup sugar
2 tablespoons ground cinnamon
3/4 cup raisins, almonds, or mixed fruit (optional)
Glaze:
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla extract
3 to 6 tablespoons hot water
Heat oven to 350 degrees F.
In a small bowl, dissolve yeast in warm water and set aside.
In a large bowl mix milk, sugar, melted butter, salt and egg.
Add 2 cups of flour and mix until smooth.
Add yeast mixture.
Mix in remaining flour until dough is easy to handle.
Knead dough. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.
When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with raisins, crushed almonds and fruit mix if desired.
Beginning at the 15-inch side, role up dough and pinch edge together to seal.
Cut into 12 to 15 slices.
Coat the bottom of baking pan with butter and sprinkle with sugar.
Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes.
Bake for about 30 minutes or until nicely browned.
Meanwhile, mix butter, sugar, and vanilla.
Add hot water 1 tablespoon at a time until the glaze reaches desired consistency. Spread over slightly cooled rolls.
