Couscous 'N' Garlic Shrimp

Fedup of eating prawn curry. Might as well try this one where can I buy couscous from in Lautoka?

Couscous 'N' Garlic Shrimp

ingredients

  • 24 fresh or frozen large shrimp (about 1 lb.)
  • 1 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 tsp. dried tarragon, crushed
  • 1/2 tsp. dried thyme, crushed
  • 1/4 tsp. Old Bay seasoning or celery salt
  • 1 5.6-oz. pkg. toasted pine nut-flavored couscous mix
  • 1-1/4 cups chicken broth
  • 1 8-oz. jar oil-packed dried tomatoes, drained and chopped
  • 2/3 cup sliced green onions
  • 1/3 cup lemon juice
  • 1/4 cup butter, melted
  • 1 6-oz. pkg. fresh baby spinach
  • 12 pitted olives, halved
  • 1 Tbsp. snipped fresh parsley (optional)
  • Shredded Parmesan cheese

directions

  1. Thaw shrimp, if frozen. Peel and devein, if necessary. Rinse shrimp; pat dry. Place shrimp in a large self-sealing plastic bag. Add oil, garlic, tarragon, thyme, and Old Bay seasoning. Seal bag and turn to coat shrimp evenly. Marinate in refrigerator for 1 hour.
  2. Prepare couscous according to package directions using the 1-1/4 cups broth in place of water. Stir tomatoes and onions into couscous. Set aside. In a bowl combine lemon juice and butter; set aside. In a large skillet cook and stir shrimp with marinade over medium heat for 3 to 5 minutes or until shrimp turn opaque. Pour half of the butter mixture over shrimp. To serve, divide spinach among individual bowls. Spoon couscous mixture on spinach. Arrange shrimp on couscous; spoon remaining butter mixture over all. Sprinkle with olives, parsley (if desired), and Parmesan. Makes 4 to 6 servings

Fresh Cheese Yoghurt

ingredients

  • 1 16-ounce carton plain yogurt or plain goat's milk yogurt*
  • 2 teaspoons finely snipped fresh herbs (such as basil, thyme, oregano, marjoram, chervil, rosemary, or parsley) or 1/2 teaspoon ground spice (such as black pepper, white pepper, red pepper, coriander, or chili powder) (optional)

directions

  1. Line a yogurt strainer, sieve, or a small colander with three layers of 100-percent cotton cheesecloth or a clean paper coffee filter. Suspend lined strainer, sieve, or colander over a bowl.
  2. Spoon in yogurt. Cover with plastic wrap. Refrigerate for at least 24 hours. Remove from refrigerator. Drain and discard liquid.
  3. Stir herbs or spices into the cheese, if desired. Store, covered, in refrigerator for up to 1 week. Makes 3/4 to 1 cup (six to eight 2-tablespoon servings).
  4. *Note: Use a brand of yogurt that contains no gums, gelatin, or fillers. These ingredients may prevent the whey from separating from the curd to make cheese.

Difference between here and there

The difference in the way women express themselves here.
So assertive and direct, Unprofessional and very much confrontational. I look around and quickly think how I never want to be like that and then I stop to think, was I like that?
Well I am thankful to Stee for teaching me about being diplomatic about situations around me and for SUIS for teaching me to be professional, mature and sensitive to what I say and who and how it will affect those around me. Although sometimes Jitoko does constantly remind me to think first before saying anything. I am realising right now how much I really want to think first before I say anything.
Was I really loud like that? Was I as much of a busybody as that? What about victimising?

Got everything on my API working even the consuming part by enabling HTTP Get and Post methods, not recommended in forums but will use as old system is built on the same way; will however mention it to my boss
Only thing left to fix is the insert. Comeon.....please work!!!!!

And all I had to do for enabling the HTTp get and post was amend the webconfig...stupid!

XML API Update

Done with my xml API, well the services part of it anyway. Having problems figuring out how to consume it without using datagrids and webforms but directly through xml. Also having problems with the insert method. Can't yet figure out what is wrong with it! Gotta do everything possible to deliver it today! One way or the other!

Change Program in Church

Jitoko and I have been asked to run the Change program in church. Age group for single and above 20. Program is said to be flexible to allow more of a place for connecting rather than services. Sounds interesting. We told pastor and his wife we will pray about it and let them know about it in the middle of the week whenever they are free.
I see us as salvagers. Yes interesting concept but the more I think about it the more I am convinced that is what we have been called to do and I also think someone gave me a word of knowledge of it sometime ago just can't remember who. But I told Jitoko if we look around at the tings we've been doing lately it makes alot of sense(him more than me)Jitoko's work withe the music team, to fire them up, our trips and his committment to lovu and I guess now with Change. But my heart is with the teens, he said the same thing. So we might be telling Pastor and his wife that we will steer it back on course and then find them the leaders to run it. Couple that is not at C3 Church yet but coming soon I can feel it in my spirit!
